Falafel

Falafel are lebanese chickpea spicy balls. They can be eaten with salad or as a starter (It's part of the feamous Lebanese Mezzé )-I'm going to talk about Mezzé in one of my next posts.

You can serve them alone or with tomatoes, green salad, cucumbers, and seasoned with Tarator Sauce.

You can also, instead of ball, make a sort of mini humburgers shape and make sandwiches with tomatoes and salad and Tarator Sauce or Hummus (I will post the Hummus recipe very shortly)

Ricetta:

 Recipe:
the preparation has to be planned the day before because you have to let the chickpeas soak in water for 12 hours at least.

Ingredienti per una ventina di polpette

300 gr di ceci secchi
1 cipolla tagliata a dadini
1 spicchio di aglio
una manciata di prezzemolo tritato
2 cucchiaini di coriandolo in polvere
2 cucchiaini di cumino
1 cucchiaino di paprika
1/2 cucchiaino di lievito di birra in polvere
sale
Olio per friggere

Ingredients for about 20 falafels

300 gr dried chickpeas
1 onion (cut in small pieces)
1 garlic clove
1 handful of chopped parsley
2 tea spoon of ground coriander
2 tea spoon of ground cumin
1 tea spoon of paprika
1/2 tea spoon of baking soda
salt
Frying vegetable oil

Preparazione
Preparation

Leave the chickpeas to soak for the whole night or in the morning if you want tio prepare them in the evening.
Peel the chickpeas pressing them between the fingers, it's a bit long and boring but it's absolutely worth it. I usually help myself putting the chickpeas on a chopping board, cover them with a towel and press them with a roll pin. I finish peeling them with my hands and then rinse them under water.
the skin will float and be removed by water.

Put all the ingredients into a food precessor bowl and grind . Be careful not to grind too much, the mixture should not be a paste because the falafels would be too stringy

Make the balls, trying not to press them too much for the reason above.

Squisite!

Heat oil in a large pan and fry the falafels.  They are ready in a while, so be careful! Don't burn them!!

And here they are! crunchy outside and soft inside, really delicious.
Yesterday I served them just with tomatoes and Tarator Sauce (see picture on the top)

Ciao!!

Salsa Tarator

Ingredienti

Ingredients

2 tea spoons of sesame paste (Tahina)
1,5 tea spoon of lemon juice
1 small garlic clove
2-3 tea spoon of water
salt(I personally don't put it because I think Tahina is enough salted)

Preparation:

In a small bowl, squeeze garlic, add Tahina, lemon juice and beat with a fork, add slowly water until you obtain a sauce enough fluid to drop easily.

And here in the Tarator sauce! It' is excellent as seasinning to Falafel.
I actually didn't manage to take a nicer picture, I was too busy to prepare Falafel;)

Tahina

Tahina is a sesame paste very common in lebanese kitchen (more generally in Middle East ).
You can buy it in ethnic shops or big stores but not anywhere. As it's so simple to prepare I personally prefer to make it by myself. Here is the recipe.

Ingredienti:

Ingredients:

100 gr of sesame seeds

2-3 spoons of seed oil: (If possible use sesame seeds oil, but if not, any other seed oil is ok)

2 tea spoon of  white floor

1 pinch of  salt

Roast the sesame seeds in a pan until they become slightly darker(not too dark  because the paste will taste bad)
You can roast the sesame seeds into the oven as well, being carefull to blend them very often in order not to burn them.

Put the sesam seeds into a food processor and grind them, check if the sesam sticks against  the inside it.
If it does, just remove it with a spoon and go on.

Aggiungete sale e farina e continuate a tritare. La consistenza finale deve essere così
.
Add salt and floor and keep on grinding until you have this texture

Put the paste into a small glass container. Keep it in the fridge, you can preserve it for  many weeks.

Buona notte!

Good night!
